Migrating an Exchange 2003 Cluster to a new SAN

We're going to be migrating an Exchange 2003 cluster from an old SAN to a new SAN.

What's the best way to get the Exchange Databases and Logs to the new SAN?

Our vendor is planning on stopping the Exchange services, and then using a utility called "xxcopy" to make a copy of the database file and log file from the old san to the new SAN and then connect the new SAN using the old drive letters. Will this cause problems? Do I have to use the ESM tool to move the database and logs?
