Upgrade of Exchange 2003 to 2007

We are upgrading from exchange 2003 to 2007. I would like to describe our existing environment and hopefully get from you expects the best way to deploy (upgrade)  in terms of say if have to put different components on different servers or have all components on one server.
1. We are heavily dependant on our emails i.e. high availability
2. We have about 80 email users - 70% in the corporate office and the rest in 4 remote locations
3. Our email server is located in a data center - coporate and remote locations connected via VNP tunnels.
4. With regards to our existing exchange server all components of exchange sits on one server.
5. We use outlook as the client
