How do I change ISP Mail and use Exchange SMTP instead of POP3

My client is currently using a private provider for mail which is mail.netconnx.net and has their Exchange Server 2003 using POP3 to retrieve mail.  The domain berkshireahec.org is hosted through Network-Solutions.  I think my goal is to have Exchange 2003 start retrieving the e-mail through SMTP, is there a way to do this?  The other alternative was to move the mail to Network-Solutions and have Exchange continue to use POP3 on that server or have them use SMTP but I'm not sure how to do any of this.  I would prefer having the Exchange Server handle mail retrieval through SMTP, but how does this get configured?  Would the email know what user to go to?  Do I change the MX record at network solutions to point to the static IP of our server?   How does the mail get collected and distributed to the mailboxes?  

Can someone walk me through the best process and how to make this work?  I'm doing a server migration this weekend so this is very urgent.Start Free Trial
