unable to uninstall HubTransport on Exchange 2007 sp1

Zone: Exchange Email Server
Tags: Microsoft, Exchange 2007, sp1, trying to uninstall so I can do clean install
I have a client that was trying to do a migration upgrade from server A (running windows 2000 and exchange 2003) to a new server
Server 2003 r2 64bit with Exchange 2007

the client found they could not migrate mailboxes across due to the old server being older then windows 2003, (ie windows 2000 AD)

They have removed the new server from the domain and created a new AD

they had a problem reinstalling exhcnage 2007 after this (did not like the hub transport)

they need both AD and exchange on the same server (before people comment on that) as they are only a small environment)

I have uninstalled the all the exchange roles except the Hub Transport Role which I need to remove so I can do a clean install.

Any idea's??

I have already tried
get-OfflineAddressBook | where { $_.IsDefault } | remove-OfflineAddressBook
which did not seem to do a lot.
