What i am looking for is an exchange sink script that will allow for the filing of X-Spam headers into junk email folders.

We use amavisd-new and spamassassin (with pyzor razor & DCC)
I can get amavis to insert anything I like into the header if spam is detected, but I can't work out what (if anything) exchange will take notice of. It completely ignores x-spam stuff

First sorry my english is not fine, and I hope that i understand you correct,
are you looking for changing the value of x-spam
if you are planning to make the exchange do an action against the header, then you can not
Exchange will read the header and do an automate process for the message and in 2003 you can not do anything with this
