Within a lab, just using your LAN and your local DNS servers, it should be possible to make mail routing work. However, you cannot have .local as a domain name on the Internet.
Consider also that you can have Microsoft Active Directory domain names that use .local and then have email domain names that are completely different. Exchange servers can handle multiple mail domains and are not constrained to only handling emails where the mail domain is the same as the AD domain. Even the humble IIS SMTP server can handle multiple email domains that don't have to match the AD domain name.
