There will be a stuck delegate somewhere, maybe in Outlook, or could be in the domain itself. You may have to go through adsiedit to find it.

Windows 2003 stand for all server
Exchange 2007 SP1 (all mailbox was move over from Exchange 2003), we keep the exchange 2003 running from the old server in case anything wrong.
However on one user, only one user, when we send appointment request there's 5 people receiving the meeting request which we can't figure out why it happen and it's annoy the other user...
The following is the actual email all five user receive however when we schedule the appointment it's 1v1 user... And somehow the actual user is not show on the appointment(is it rare?).

When sending the appointment, are they sure they are sending to the user and not a group that the user is a member of? Try using message tracking in the troubleshooting section to try to see how the message is routed around.
Also are you sure the mailbox is a user mailbox and there is no forwarding for the mailbox?
