As a result I would like to have that mailbox as a PST file. What is the easiest way to do it? Do I need to install a secondary Exchange server?

Hi,
First go ahead and restore your DB in some folder from backup. Then via ESM go ahead and use Recovery STorage Gruop to mount the DB in the RSG. Do not worry this would not interfere with the Production database. Once this process is over, then go ahead and use ExMerge to export any mailbox to PST. The PST then can be used from any Outlook client or imported to some mailbox on production database.

You can use a Recovery Storage Group to recover from, assuming that you have the space for it. Otherwise, setup another server and restore to that.
