Hello jbauer22,
I am not an Exchange expert, so without being able to elaborate on specifics, yes, it is quite easy for admins
to tap into your email.
As far as "confidential" email goes, in the US you should pretty much assume that you have zero right to privacy
when you use your employer's computer equipment and/or network. With very few exceptions, your employer
has the right to review any mail you send or receive from your company account, for any reason or for no reason
at all.
