There are a lot of setting to enable/disable in the managment pack, I womder if there is an article which one are the one you must enable and which one you can turn off.

Out of the large amount of events Exchange 2007 managment pack have in SCOM 2005, is there a website that will list the ones that are best practice, or the one I realy must have.
Ex: mail store dismounted = a must have
bios update = not a must have.

SCOM doesn't really work like that. Because the management pack is designed by the Exchange Product team it is delivered in best practice configuration and you shouldn't need to do much turning on or off at all to it. The Management Pack comes with installation instructions - you should make sure that you read the management pack guide cover to cover.
One thing to be aware of - the version of the Exchange Management Pack used in SCOM 2007 vanilla and SP1 versions is actually a converted MOM 2005 management pack with a few tweaks and is a little way off perfect.
To get the management pack written specifically for SCOM 2007 (and therefore making full use of SCOM 2007 functionality and delivering the full set of reports) you need to be running SCOM 2007 R2 and the latest release of the Exchange Management Pack.
If you have particularly noisy alerts, you should investigate these to see if adjusting them or turning them off completely would better suit your environment. Involving the Exchange Administrators in your organisation in this process is very important.

do you mean MOM 2005 or SCOM 2007? The architecture of the two is very different and so are the management packs. If SCOM 2007, are you running R2?
The latter is designed by the product team and comes delivered in "best practice" mode. You can, however, tune things so it better suits YOUR environment.
