Extracting email data from Exchange Database

A customer's SBS2011 running Exchange 2010 got corrupted.  Looks like the backups backed up the corruption so we had to do a fresh OS installation.  The server is up and running with a new instance of Exchange.  I was able to Export everyones Offline Outlook to PST, rejoin the domain and Import the PST into the new Outlook profile.  With my luck, one employee was on vacation and her computer was off.  When I exported her Outlook data, it never synced with the old/corrupt server and now 1 week of emails are missing.

In the original server, the Exchange database was on a separate partition which is still accessible.   How can I extract the missing emails from the original Exchange database?

I am objecting to the question being closed for the reason given.
I provided an answer to the question - that you decided not to use the answer doesn't mean it was an incorrect answer.
I see your point, however since the customer did not want to spend any money on buying a third party tool I couldn't accept as a solution as your solution was never tried on our end.  By the looks of it, you have never tried it either.  I think your post leans more towards a suggestion than a proven solution.
