Splitting MX forward

At a company I work for they are looking to starting hosting their E-Mail onsite instead of paying a company to do it. I was looking for different solutions top that problem and I went through the normal routes (exchange out of the question, to expensive) and I found a software solution made by Zimbra. I was researching the company and they seem reputable but I was wondering if anybody has any experience with the suite and company. The actual question I was going to ask was how hard is it to split a Mail MX forward on a web host because I don't want to interrupt normal email traffic while I test out this email solution.
