However, our users liked having their spam go into a Spam folder and disliked the digest. Does anyone know of an off site spam filtering service that will deliver to a SPAM folder within outlook?

Don't bothere with off-site anti-spam - I just installed Vamsoft ORF (www.vamsoft.com) and have had ZERO spam since installing it.
The download is only 40Mb - so it is in no way bloatware and it consumes about 30Mb of memory when running.
The software was recommended to me by Mestha - EE's leading Exchange Expert. My customers have also had ZERO spam since installing the software.
It is priced per server at $239 and is therefore very competitively priced.
You should really give this software a 30-day Trial.
I am not aware of anything that will deliver the email to the Junk Email folder in Outlook because of the way that works.
It would require the filtering to be done off site, then something installed on the Exchange server to move the item to the folder, or a rule on each client.
The closest you could get would be to have the email from an off site provider tagged, and then use IMF on Exchange and a custom weighting. That should cause Exchange to put the items in to the Junk Email Folder.
However it would rather defeat the point of site filtering, as the email is still being delivered to your store, unless you are going to setup the off site system to only send to your server things that MIGHT be spam and drop confirmed spam.
