You have mainly think about how your other infrastructure is setup aswell, MS vs Non-MS.
As MS - Exchange is well integrated with AD has its own advantages. Ex: If have all your desktops authenticating to the AD domain controler. The you would have to consider that aswell.
On the other hand, on Linux there are several (Groupwise well integrated with eDrectory, Citadel groupware suite)

What you basicaly need is the following (no costs at all):
SMTP: e.g. exim or postfix
POP3: e.g. dovecot or cyrus mail system
its open source I use (linux world). But at least exim runs also on windows using the cygwin environment.
When the OS could be linux I would recommend a debian lenny based system (easy install, easy administration, easy security updates).
