How Do I Compile / View / Use ExMon Logs To Attempt To Solve Slow Exchange Server?

Hello All -

Our company has been having difficulty lately with Exchange being slow.  The research that I've done so far has pointed to a high RPC rate.  Currently, there are only 40 mailboxes divided amongst 5 different domains on the server.  It's the only Exchange server that we have also.  

I think the issue is because most of the mailboxes are connected to via Outlook Anywhere.  Also, many are accessed by phones as well.  All of the phones are set up on OMA, though, not POP/IMAP.

I must try to find a fix (if possible or even needed) as today we are adding about 15 more OA mailboxes and in two weeks about 100 OA ones (not to mention phones)

I ran ExMon a couple of weeks ago and once done, had 1600+ .etl log files (screenshot attached).  After researching, I still can only view one at a time and all commandds I try won't let me complie them.  I tried to export the to csv, but am either doing it wrong or can't because they are individual files.  Did I run ExMon wrong perhaps?

Exchange 2007 8.2
Windows Server 2008 Standard SP2 x64 (I also disabled IPv6)
Running In A VM
