How do I know the roles played by these two domain controllers.

Server 1 : Has Domain Namin Master & Schema Master Role
Server 2 : PDC Emulator , RID & Infrastructure Master
Which server shall I reboot first.
If I reboot the server will it cause FSMO roles to be transferred over to the other server ?
How will it affect the exchange server & User Mail ?
How will it affect the users from login to the domain ?

Use this command line tools "netdom query fsmo" , the netdom tool is part of Windows Resource Tool Kit
