Granting local resource permissions to users in another forest

I am trying to resolve an issue with adding users from one domain into a security group in a second domain for access to a folder within the second domain.

Following a merger, our client's network has two domains in different forests "Domain1.co.uk" (Domain1)and "Domain2.local" (Domain2). Both domains are configured in mixed-mode but there are a mixture of Win2k and Win2k3 DCs. One way trusts are configured on both domains in both directions and are set to domain-wide authentication.

I have created a number of global security groups on Domain2 but can't add users from Domain1 into them - Domain1 doesn't appear in the list of locations. Instead I have to add the individual Domain1 user accounts to the directly to the folder. There are too many users and too many folders to do this for each of them.

I need to resolve why I can't see Domain1 in the list of locations when adding the users to Domain2's global security group.
