Binding a MacBook computer to a Windows 2003 server

We have a windows 2003 sever and 90 MacBooks.  How can I bind these MacBooks to my server, so that each student will have to logon to the server when he/she uses the MacBook?  2nd question:  Can I set these up so that there is a choice of logging on to the server or to the MacBook in case our server goes down?
