Trouble with Sendmail wrapper, need to log emails sent with PHP's mail() function

I administer a box that has several virtual hosts and last week our server apparently got used as an open mail relay, and the emails were sent from apache@my.domain.com, which leads me to believe that somewhere, someone has a form that uses PHP's mail() function. I tried to grep all the files that used it:

$ grep -Ri 'mail(' /var/www

But the results were quite lengthy. I hit up Google and found where some suggested a Sendmail wrapper to log information whenever PHP uses the mail() function. Here's what I did:

1. Made the wrapper, which contains:

#!/bin/sh
logger -p mail.info vhostmail: site=${HTTP_HOST}, client=${REMOTE_ADDR}, script=${SCRIPT_NAME}
/usr/sbin/sendmail -t -i $*

2. Changed sendmail_path in /etc/php.ini to point to the new wrapper
3. Chmod 755 the wrapper

The logging works, in that whenever an email is sent using PHP's mail() function, an entry is written to /var/log/maillog, but this is what comes out:

logger: vhostmail: site=, client=, script=

So the HTTP_HOST, REMOTE_ADDR and SCRIPT_NAME variables are not available to the shell. My main question is how do I make these Apache environment variables accessible to this script?

Other information:
OS - Fedora Core 4 (I know, I know, it'll be upgraded in less than a month)
Web Server - Apache 2.0.54
