We're in a production environment, so if people could not get to the site we would definitely hear about it. I think it is something prohibiting the logging from functioning correctly. whether that's the cache server, firewall, or ssl accelerator I don't know. Though I'm leaning toward the cache server.
BTW, there were the same number of fields before and after. However since discovering this issue I've added more fields to the log file.

Can you check if the above are all the same number of fields you had before noticing the logfile size getting smaller ?

The 500 in the end means you are getting a internal server error page displaying. Your IIS is not working hence people are not going to your site = smaller log file
