IMail from Ipswitch is a very good basic mail server with enough add-ons (virus/spam) to keep you busy. Read more about it here:

It lacks some of the nicer features (such as shared calendars) that Exchange offers, but if all you want is a basic mail server, it's hard to beat.

Or Merak Mail Server, which is cheaper than IMail:

If you want a good email system for either windows or unix which is feature rich has probably the best web-based administration system and also webmail client I think on the market, checkout atmail, www.atmail.com. Atmail is probably the most simple email system I've ever configured. Otherwise, if you are looking at Unix based system, I'd highly recommend using Qmail with Vpopmail. If you use the Debian distribution you can "apt-get" qmail + vpopmail + vqadmin + qmailadmin + squrirrelmail which will give you a complete MTA, pop3 server, web-based management system for adding / removing domains plus a simple system for managing user accounts.
