U can use teamviewer it will work even without setting port forwarding and it even works with the dynamic ip.

However, whenever I need to connect remotely to the latptop, I have to first go and open PCAnywhere on the laptop and instruct the laptop to wait for a connection. There are other computers that always show up on the host list, without me having to go open PCAnywhere on them. I'd like to setup the laptop to do thesame. How do I go about this?

It varies from version to version of PcAnywhere but should be something like
Select hosts
Right click the host you want to start with windows
Click properties
Click the settings tab
Tick launch with Windows
