What if you have 2 processors and 4 logical processors , dose that meen I using the 4 cores for esx server ?

Only processors that support hyper threading will show as active. Also note that Hyper-threading must be enabled in the BIOS before ESX will enable it.
You can see that all your CPUs are available to ESX by reviewing the Summary tab of the host in the VI client connected to the server or to virtual center. Details of the Processors are on the configuration tab. It will list the sockets, cores per socket, logical processors and if Hyperthreading is enabled.

Dual core and hyperthreading are different technologies
Intel CPUs had hyperthreading before dual and quad core came along
In the Configuration page of the ESX server (via VI Client) as well as telling you whether or not hyperthreading is enabled it will also tell you how many processor cores per socket the ESX server has and how many logical procerssors you have
