Question on using VMWare to virtualize dual-homed servers

Hello Experts.  I'm posting this question just to get some high-level concept details on how VMWare ESX server virtualizes servers that are dual-homed (i.e. two NICs each connected to totally different networks).  My organization is considering virtualizing these dual-homed servers and somehow i was named the resident VMWare expert.  

Can someone tell me how VMWare handles dual homed networks?  I am thinking I'd have two NICs on an ESX server with network A plugged into NIC 1 and network B plugged into NIC 2.  When I set up my virtual servers on this ESX server, I would allocate 2 NICs to each server, but, is there a way to ensure that NIC 1 on my virtual server definitely corresponds to NIC 1 on my ESX (physical server) and NIC 2 on the virtual server corresponds to NIC 2 on the ESX (physical server).  

Would some of you experts give me some insight into whether this will work or not?
