Vmware host only lab and need to test sending mail externally

We need to somehow test sending emails externally (and receiving a reply) from a Vmware server host only lab.  The lab contains a subset (W2k3 DC, Exch Ent 2003 and clients) of our production servers so we need to be 100% certain that whatever we do, we won't have clients on our production network inadvertently talking to our Vmware test lab.

Can this be done and if so how?
