Best way to one time backup Virtual Machines

We currently have an EMC NS40 SAN running our Vmware ESX 3.5 farm. We need to add an additional disk shelf to the SAN and EMC tells us that they must first upgrade firmware on the DART. This means that the entire SAN will be down for up to 8 hours. Not good but we need to do it. Our worry is that we may lose our VMFS datastores in the process.

What we are trying to do, is a one time backup of all the VMFS datastores, approximately 2.1TB to a location outside of the SAN. So we have a physical server with 3TB of local disk but are kind of stuck on how to connect it to the SAN (without using a FC HBA).

I've looked at Vmware VCB and it might work if we can use iSCSI but we are not to confident on implementing this (as we currently only use fibre).

Can anyone offer any advice on how to copy the entire datastores to a physical server? At the moment the server has no software installed on it so we can install whatever is required.
