You have a cup of choices :
a) Just doing a VMotion, but you need to buy VirtualCenter and VI3 with Vmotion.
b) You can buy esXpress, Veeam, VizionCore, Platespin, or other software that backup your workloads
automatically.
c) You can manually do a snapshot of your workloads than browse datastore and download vmdks
(no automatic method).
d) You can use a existing script like VMBK
Always try your DR procedure and document it best you can, because when you are in fault you do not have the time.
