Need to Backup Linux CentOS Blue Quartz Web Email Server [using Ghost?]

Hi All,
I need advice on this one. I am a windows technician but one of my clients is running a linux CentOS Server. [running Blue Quartz, Email, and Ecommerce via a Joomla based Web Site] ... the original vendor who set up the server is no longer available and the client is in a tough spot. The server has been having some issues lately requiring reboots and the client desperately wants to backup the entire server to another hard drive... They don't think the server / custom developed web site is backed up anywhere else!!!

The server is an IBM eServer with two 36Gb Ultra320 SCSI hard drives running RAID 1 [LSI Controller].

I have Ghost version 2003 and the latest, Ghost version 12. I also have drive copy 4.0.

Can I hook up an 80+GB IDE hard drive and use Ghost to copy the entire contents of the RAID to the IDE drive? [Effectively creating a complete backup which could be used to restore the server back to its current functioning state in the event of a disaster???]

Another user, in another post, recommended: http://www.sysresccd.org/index.en.php - Could this product be used to copy the RAID contents also?
