Raid 1 only uses 2 disks per array. If you want to add a 3rd disk, you might be able to use it as a hot spare (if one of the other disks breaks it'll take over from that disk). To be able to use that disk you would have to connect it to a non-raid controller, or then your raid controller would have to be configurable to uses one disk in it's own "array". This can't be done with many controllers. A 3rd option would be to get another disk and create an additional raid 1 array.
