Some of the newer versions of MS OS software do not even come with ntbackup anymore. Using the recovery storage group is the anticipated method so that you can selectively bring things back as you require. Symantec (backup exec or Netbackup)and many others have software that would meet the need.

You can restore the data that you need.
The idea is to restore the data to a Recovery Storage Group. You can then restore the data through that interface.
Third party tools can do mailbox level backup, but they are very slow, very inefficient, would not replace the information store backup and in most cases are a waste of time and tape space.
As you haven't said which version of Exchange you are using, it is not easy to provide you with links on how to use the RSG, but for both the main versions of Exchange Microsoft have instructions on Technet and/or their KB.
