How to Copy select files from a Veritas Backup Tape?

I have been told to set up a new server at a small company.  They used to have a server that died and all they have is a set of backup tapes (2) that they used Veritas Backup Exec to back up too.  The original server had 5 partitions (and a CD player as E:, so they were C: through H:) and it was running Windows NT.  I purchased a system with RAID 5 and it is running Windows 2003 Server.  All I want to do is get the files off of the tapes and back onto this newer system.

I have access to a similar computer to the one that died.  It also has Windows NT and Veritas and the exact same Tape drive.  However, it only has 2 drives (C: and E: with D: as the CD player).  I just don't know how to get Veritas to allow me to copy files from the Tape to a specific location on this second system.  If I can do that then I can simply copy the files over to the newer Windows 2003 Server (via Ethernet).

What I can do on this second system is an Inventory on the tapes and also Catalog them.  Still, since this second system only has drives C: through E: defined I am only seeing the files from the tape for drives F: through H: (missing C: through E:).  In any case, even if I could see all the drives that were backed up to the tapes I don't see any way of instructing Veritas to put files into a specific location (of my choosing).  Instead, it seems like it will only restore files to their original locations.  So it will try to put everything that was on the backed up F: drive back onto the F: drive which in this case does not even exist on the second system.

Basically, I just need a way to get at the individual files that are located on the Tapes and be able to copy them to a location of my choosing.  Is there some way for me to do this with what I have?  I think this is an easy question, but I'll offer 500 points because it saves me a lot of time trying to search down an answer.  Thanks.
