??easy?? 3ware RAID 1 drive upgrade?

Hopefully this will be pretty simple:
I have a Small Biz Server with 2 RAID 1 arrays.  
- OS is on a 72gb U320 SCSI array.  
- Data is on a 500GB SATA mirror connected to a 3ware 9550SXU-4LP PCI-X SATA II RAID card.

Data disks are Seagate Barracuda ES.2 ST3500320NS 500GB 7200 RPM SATA.  if you know anything about these disks, you may or may not have heard to steer clear of them. i bought them for my client in Feb 2008 and last week one of them failed.  this must have been right about the time Seagate started having all of its 'issues'.  whatever the case, the apparent failure rate on these is STAGGERING.  

Anyway, i consulted management and told them i don't trust a replacement seagate ES.2 or anything from Seagate for that matter.  Not right now anyway.  They agreed and we purchased 2 WD RE3 1TB disks to replace the existing spinners and will be adding the BBU to the RAID card.

I currently am running off of ONE of the 2 seagate drives and plan to replace both of them Saturday morning. what i am trying to nail down is what is the most sure-fire way of completing the migration.  

My thought was to simply
- replace the dead Seagate with one of the new WD's  
- re-build the array with the disparate spindles (1 WD and 1 seagate)
- break the array and remove the remaining seagate drive
- install the 2nd WD drive
- re-sync the 1st WD drive to the 2nd WD drive.  

does that sound like a plan?

of secondary importance is how to get access to the remaining drive space on the new WD drives.  do 3ware cards have an online expansion function? i'm moving from 500gb disks to 1TB disks and i imagine the initial array sync will only give me a 500gb on the new drives.
