Startup config for LUN on Dell MD3000i and VMware ESX server 3.5

Hi, we are a SMB and we starting uning SAN and VMWare to consolidate serveur and data. Like our server park a not all old yet we will do a progrssive migration from Standard server to VMWAre host over the 2 next year. The initial budget are limited and we need to deply our solution in multiple phase to respect the IT budget. For the fist phase we buy a MD3000i with 2 Storage Proc in Active-Active and one ESX server with 2X 4core CPU (3.1Ghz) and 16Gig or ram.

In the SAN box we mix 2 type of disk. For now we having 3X 300G SAS 15K RPM disk and 3X 750G SATA drive. I need help to well choose the raid level and the size of LUN. I try to be more efficient possible for iSCSI I/O trafic.

I think of:
Use the 3 SATA drive in Raid5 for storage purpose (Online backup that we offer, file server storage). 3 LUN of 500G each . I think this is simple.

The more complex thing is for the 3 SAS drive. I need space to put the VM on it, I need space to put a SQL Database file. For the 1st phase we will virtualize one Exchaneg 2007 and one Terminal Server 2008. I thinking of 2 LUN of 300G one for VM and the other for the shared data like (Exchange data, SQL, Application data pushed by terminal service, etc). I was thinking adding one SAS disk and use Raid 1+0 but I don't know if the MD3000i support this configuration. But for the VM and the SQL databse the raid 1+0 are verry improved performance over the raid 5 ? I think that VMware prefer more small LUN because if I have multiple HOST acceding the same LUN the iSCSI link can be more slower according to the lock menanism ? What do you suggest me for this SAS drive?
