New To Sophos Need To Deploy To 1500 Workstations

I have 1500 workstations I will be deploying Sophos (Endpoint Security and Control) to and have a couple of questions.

1. I have 25 sites what is the best way to manage all of these. Can I do this from just one enterprise console?

2. If I understand correctly I can use SMB shares to distribute signature files to workstations. Since I do have SMB share at all of these sites that would be nice.

3. I currently have Symantec Antivirus Corporate Edition installed on all of these workstations. What is the best approach to uninstalling Norton cleanly without incident?
