I hate to be "that guy", but why not ditch McAfee and get AVG. MUCH smaller footprint and CPU usage. And best of all, it's FREE!

This is only generic advice, but I know McAfee will make available 'Patches' for their various products.
Are you sure that both ePO and all of your local McAfee products are fully patched and up-to-date?
Depending on the use being made of the local host, is it feasible for you to schedule a re-boot after the scan is complete? I used to schedule that on all of my workstations - just to clear out all of the temp/cache action that had taken place during the day.
The Expert I mentioned before works on that big island North of the English Channel, so he may not get a chance to check in for several more hours.

In my past life, we had direct access to the Support Staff at McAfee so I am not sure of the kinds of support available to you. If you can open a trouble ticket of some kind to work through this with them, that is always a good idea.
The Tech staff all have supervisor-types who follow up on open tickets to make sure the problem is resolved.
I will keep monitoring your responses - and add anything that I can drag out of memory.

nstello, what patch version are you running ? (right click the V shield and choose about, patch number should be shown in the box)
Also, what version of the ePO agent are you running ?
How many workstations does this affect, out of a total of how many workstations ?
What OS are the clients running ?

Hi nstello.....
OK.....this issue is resolved in Patch 1 for VirusScan Enterprise 8.5i
You need to log in to the downloads site using your Grant Number and download the patch
Install it manually on 1 test machine and confirm that the issue is resolved
Once it's resolved, check it in to ePO and deploy it to the network

This issue was not fixed until a hotfix released in March 2009, I too run VSE 8.5i with Patch 7 and am in the middle of testing patch 8 which is their last update for 8.5. The hotfix for the memory usage issue can be found below. My 3 systems now run McAfee under 50Mb at all times, unless updating or scanning, when it increases slightly.
Hotfix number is 458640, below is the link to the secure knowledgebase page, link for file is at the bottom. I haven't tried this through PRP yet, just locally on my 3 IT systems, but i imagine it should push out ok:

With ePO, you can set the 'Throttle' for max percentage of processor usage by each of your local hosts.
Also, I always configured the scans to be done during off-hours in order to not interfere with the times when the users were logged on.
