The answer to your question is that it appears that the image was simply resized to the required dimensions, which resulted in the distortion. Instead of resizing, you need to use a larger version of the original, and then crop it to the required proportions.
If you don't have a larger original, you could try increasing the total size, and then cropping (or, if you are using Photoshop, you can set the desired crop size and then select the area of the photo you want to use, Photoshop will automatically increase the image size to the dimensions you set). This may result in some quality loss from using a smaller image size than optimum. I have an article here on EE that talks about increasing image size that may be helpful:
