Hi Steve,
Which version are you using? I do have an "Automate" feature that leads to "Batch", which in turn leads to a "Play" dialogue (including: set: "Default Actions") and a source and destination folders. However, there's no conversion feature there, unfortunately.
BTW, I've got PS 5.0 here (only use it to convert the occassional EPS or some such).
Your suggestions appreciated.

I've had to do the same thing before -- it's quite simple:
1. Open a sample EPS file
2. Just create a macro in Photoshop (window ... actions [make sure it's checked], go to the actions palette, click new action [paper turning icon on the bottom], and then record). Do a Save As... and set the JPG options you like. Then stop recording the macro.
3. Do a File ... Automate ... Batch, then make the appropriate selections for the macro name (that you created above) and an output folder.
This should do the trick. I'm suggesting this from memory, so let me know if you have any issues and I'll retry this myself.
