Can you determine which emails or documents were opened by an unauthorized user in web outlook?

One of our users believes his ex wife or the ex wife's friends have been accessing his email using his id and password.  We have an IP log which we believe we can trace to the unauthorized users.  My question is, is there any way to determine which emails were accessed, or attachements that were opened?   We want to find out if she only accessed the user's personal emails or if she has obtained any  confidential company emails?

Also, if anyone has dealt with a similar issue, are you aware if there is any legal recourse?
