No, the new site is VERY different from the old site. The old site was three static HTML pages built in 1997, the new site is fully dynamic with 30 pages, etc. In terms of being search engine friendly, are they not going to like being forwarded to the home page instead of what the search engine is expecting?
What do you mean by 'other pages will loose out'?
Any idea how long I would need to keep the HTTP 301 redirects before converting to DNS?

Is the new site the same as the old site?
Idealy you want to make sure all the old pages 301 redirect to the equivalent page on the new website.
If you 301 every page to the root of the new domain then the other pages in your new website will loose out. (This is what I think your DNS forwarding will do).
