Shell script to rename and copy/move files based on creation date

My shell scripting knowledge is limited and I'm having difficulty writing a script to do the following:

- rename log files based on their creation date (e.g. from access_log.1.gz to access_log.2007-09-27.gz)
- copy the renamed log files into a web accessible folder (e.g. /home/someuser)
- move the renamed log files into an archived log files folder (/var/log/httpd/[access_log_archives]/)

Right now I'm doing all this manually by listing the files using "ls -lht --time-style=long-iso a*" then creating the linux commands to rename the files using a PHP script, then copying/moving the files and so on.
