how to tell the difference between legitimate and spam bots?

I want to do something on my Java based server to detect spam bots and prevent theft of site content  or screen scraping while still allowing legimate search engine bots such as google, yahoo to do whatever they want to do. And of course the human users should freely browse on my site without being asked for captcha id.

So when I detect spam bots, I should present captcha or simply deny further access.

Please tell what is the solution from your experience?
