Email Safe CSS

What do I need to know about creating HTML emails that use CSS? What is "email safe CSS?" My guess is that the Hotmail approach will be different from the GMail approach will be different from the Yahoo approach will be different from the Outlook approach, etc.

I think the first recommendation is using inline css, not css into <style> tags.
