i feel your question has been answered fully by JaeWebb he has provided you all the information, there is very little out there currently for open source plug ins and tools and JaeWebb has answered this fully, after researching it a bit i find nothing better than has said.
To be honest the FlexBuilder is the only real way forward for flex development as it installes almost everything you need including dataservices and coldFusion support.

If you need an editor, nothing compares to Flex Builder, but if you've got to go open source, I suggest:
