This can depend a bit on your server, most providers have some cgi program on the server which will do the job, otherwise check out a perl script called formmail, it does the job very well with only a little bit of setting up on your part. Otherwise I think there is another one called cgiemail which is a little more flexible, but I have only ever come across that on one server... it may be copyrighted not sure - check out www.he.net it makes reference to cgiemail in their faq if memory serves.
