Formatting e-mail form results to be more user friendly

Our website has a customer information and feedback form that sends the results to an e-mail address. The problem is the results appear in the e-mail in a very unreadable format. It appears that the line breaks are being removed by Outlook sometimes depending on the version of outlook. I have tried setting the form results as "enctype="text/plain"" and as "enctype="application/x-www-form-urlencoded"" neither of which corrected the problem. Is there a way that I can control the appearance in the e-mail results? Perhaps having it post in HTML tables that I can set up? Here is a test result of what I am getting. The capitalized info are the categories and lower case are the customers input. I would like to be able to tell the difference between categories much more easily. Any help would be appreciated
