Default charset for mysql in PHP

Hello

I have 2 different web servers (old one and new one)
old: fedoracore3, mysql-client 3.23.58, php 4, apache 2
new: debian etch, mysql-clinet  5.0.32, php 5, apache 2

I have website on old server that is using remote mysql server (defult database charset is latin2)

when I'm using PHP function mysql_client_encoding() on both servers:
old: latin2
new: latin1

I need to have latin2 on new server.
How can I do it?
