Saving drop down menu data as an XML file

I have a form that I am building out in HTML that contains several drop down menus.  I would like to be able to capture the data selected from the various drop down menus and have the data populate and save into an XML file.  #1, is this possible? and #2, is there a way that I can accumulate all of the data from each time the form is filled out into one (ever-grownig) XML file?  Thanks in advance.
