Best format for Ripping DVDs

I work in a school and rip DVD's to the Server on the Network so that teachers can play DVDs over the network. (All legal)

What is the best format to rip them in MP4 or VOB - or is there a better format - and what program is best to use - I have been using DVDFab, but I think that all my DVDs on the hard drive have become corrupt and so I'm going to have to recreate then - there are about 30 - so it is going to take some time. I am thinking of using Aimersoft instead as I already use one of their other products Video Converter - any suggestions
Also what is the best player to use - I load VLC onto the boxes at the school - is this the best one ?
