Assuming that both exchange server are within the same organization:
  Just sent a regular email as you normallly would for a external mailbox.

If you have 2 different exchange server with a mailbox on each other...
The 1st exchange server will route the email using MX record to the second exchange server.
(It's what happen when you submit an email from whichever exchange to a remote domain and server).
