sendmail?  sendmail+ida?  q-mail?  Which should I use?

What mail server should I look into using on my Linux server?  I am pretty much a Linux/Unix novice so obviously I need the simplest solution.  I will be setting up about 50 to 75 accounts for our company.  What do you think?

AFAIK, there is nothing wrong with the others :-)
For differences between sendmail and senmail+ida, look at
O'Reilly's sendmail book (that with the bat on the front page)
